The New York-based hotel brand known for making its restaurants and bars as celebrated as its guest rooms will open its first Asia-Pacific property in Singapore in late 2026. NoMad Hilton Singapore won’t be just another place to sleep—the brand has built a reputation for treating its food and beverage concepts as destination-worthy draws in their own right. Rather than simply cloning the original, the team says each of the new venue’s four dining and drinking concepts will have distinct identities that draw from Singapore’s dining culture, nightlife, and social scene.
A Quartet of Distinctive Concepts
NoMad Grill brings classic New York chophouse energy to the Lion City. Expect dry-aged meats sourced from around the world, cooked over woodfire, alongside seafood, seasonal produce, and brasserie staples. It’s the brand’s signature downtown glamour translated for a tropical setting.
Sticky Fingers offers a dual personality. During the day, it serves house-made gourmet soft serve and sundaes. When the sun goes down, the space transforms into an intimate cocktail bar where desserts and drinks meet unique flavor pairings, with local ingredients woven throughout the menu.
The Tropicana Club pays homage to Singapore’s own Tropicana Club, a pioneering entertainment complex that defined the city’s nightlife in the 1950s. Further inspired by Havana’s legendary Tropicana Club (1939), the result is a contemporary cabaret-inspired cocktail bar serving Martinis, Daiquiris, Manhattans, and tropical classics, accompanied by live music and curated DJ sets.
Lú Bar rounds out the quartet as a lush rooftop poolside lounge designed for slow afternoons and golden-hour drinks. Expect aperitivo cocktails and refreshing pours.
World-Class Talent Behind the Bar and Kitchen
Powering the drinks program is Leo Robitschek, the award-winning bartender whose work at NoMad earned a James Beard Award for Outstanding Bar Program and recognition on the World’s 50 Best Bars list. Joining him is newly appointed global culinary director Josh Harnden, whose résumé spans more than two decades and includes high-profile restaurants Eleven Madison Park, One White Street, and The Noortwyck.
On the ground in Singapore, culinary direction will be led by Lorenz Hoja, whose career has taken him through acclaimed kitchens across England, France, Austria, the Maldives, and Singapore. He also spent more than a decade working alongside legendary French chef Joël Robuchon, including at Singapore’s former two-Michelin-starred L’Atelier de Joël Robuchon.
