After four years of operating in strict secrecy, a clandestine Japanese cocktail lounge has finally stepped into the spotlight. Bar Kakure, a 10-seat hideout perched one floor above the famed omakase restaurant Ki-sho, occupies a black-and-white colonial bungalow along Scotts Road in Singapore. True to its name—”kakure” translates to “hidden” or “concealed” in Japanese—the venue requires a passcode for entry, which arrives via confirmation message alongside your reservation.
The Master Behind the Counter
At the helm stands Kazuhiro Chii, a Yokohama native with more than two decades of cocktail craftsmanship spanning both Japan and Singapore. A quiet professional, Chii-san works with deliberate precision behind the bar, employing his celebrated three-point-shake—a stylized Japanese technique—to craft everything from timeless classics to fresh fruit creations. His approach marries intricate recipes with discreet hospitality, leaving no detail unattended throughout the entire evening.
The Atmosphere
Stepping through the unmarked doors transports guests into an intimate sanctuary defined by quiet luxury. Dark wood paneling, brass fixtures, timber-framed windows, and a lush canopy of trees create a buffer from the bustling main road. Guests can choose between leather high-back stools at the glossy bar for an up-close view of Chii-san in action, or smaller side tables for a cozier tête-à-tête with a companion.
The Cocktails
The bar’s core menu features 10 impeccably executed classics—martinis, Negronis, Bamboos, and Sidecars among them—all fully customizable. Standouts include a citrus-forward, mellow dirty martini made with Tanqueray No. 10, dashi-infused brine, and pickled gourd replacing the traditional olive. The Moscow Mule arrives in its signature copper mug, delivering a fiery ginger kick finished with a candy accent. For those seeking the off-menu Yamaoroshi, a creamy gin-based number blends cacao liqueur with freshly grated wasabi for an unexpectedly gentle lift.
Glassware sourced from Kagami Crystal and Kimura Glass elevates the drinking experience, while Kumamoto ice—carved from water drawn from Mount Haku—melts at an agonizingly slow pace, ensuring each drink stays properly chilled until the final sip.
Bar Kakure stands as one of Singapore’s rare outlets for fresh fruit cocktails. An eight-option seasonal selection features Yamanashi plums paired with cognac for a sweet-herbaceous pour ($38), or Okinawan passionfruit blended with rum for a punchier tropical option ($32). Lighter palates may prefer Yamanashi white peach or Aichi fig paired with champagne ($38). Each fruit is peeled, prepped, and blended tableside, guaranteeing authentic flavor rather than diluted purée.
The bar recently launched “From Yokohama,” a menu inspired by Chii-san’s childhood memories. Expect nostalgic nods like blue marble soda (Ramune) and green ice cream sodas, plus summer desserts including anmitsu (agar-agar jelly). The After School cocktail ($28) reimagines the Calpis drink he received as a child—now with lychee, lemon, cream, coconut syrup, and a marshmallow stick. Three O’Clock ($28) offers a coffee jelly–inspired take on the espresso martini for those craving caffeine-infused evenings.
The Food
Small plates arrive from Ki-sho, the omakase kitchen downstairs. Dwarf peaches ($12) replace traditional olives, pickled in truffle brine for an umami crunch. Foie gras monaka ($22) combines Japanese mochi wafers with rich filling, while Kakure Fried Chicken ($24) arrives in a box to unwrap, seasoned with house-made furikake. The ebi katsu sando ($36) features plump black tiger prawns with a pungent wasabi tartare that coats each bite.
