Singapore’s acclaimed drinking destination, Jigger & Pony, has officially launched its latest creative endeavor, the “Bloom” cocktail menu. Fresh from the group’s recent expansion efforts—which included the debut of Pop City X Pony and BOP—the flagship venue returns to the spotlight with a collection that reflects the current pulse of the hospitality industry. Ranked as the World’s No. 9 and Asia’s third-best bar for 2025, the Amara Hotel outpost presents 21 new cocktails, each priced at $28.
While the previous menu, “Embrace,” centered on themes of connection, “Bloom” shifts the narrative toward resilience and growth. This thematic pivot acknowledges the challenging climate facing the bar industry today, offering a narrative of hope through mixology. The physical menu retains the venue’s signature hardcover “menuzine” format, spanning 68 pages and accompanied by a summary sheet for quick reference. The book is structured into four distinct chapters: Hope, Growth, Beauty, and Just Be. These sections guide patrons through a progression of overlooked ingredients, modern classic riffs, expressive flavors, and timeless staples.
Standout Sips and Savory Surprises
The menu’s technical prowess is immediately evident in the Mango Margarita, a top contender for the new lineup. By blending 70 percent green mango with 30 percent ripe mango, the bar achieves a distinctively sharp, tart profile that evolves on the palate. Rather than relying on a traditional salt rim, the drink incorporates a gentle infusion of Sichuan peppercorn, delivering a subtle, savory finish that enhances the fruit’s natural acidity.
Another anticipated favorite is the Strawberry Matcha Cloud. This beverage deconstructs the popular café order into a complex cocktail featuring Roku gin, strawberry milk punch, amontillado sherry, and a vodka-spiked matcha cream. Servers recommend taking a generous first sip to experience the interplay between the bitter matcha foam and the sweet, silky base. However, connoisseurs should note that the drink relies on that creamy layer for balance; once consumed, the remaining liquid may prove cloyingly sweet.
Misses and Classic Comforts
Not every experiment lands with precision. The Wasabi Highball, constructed with Toki whisky, wasabi-infused vodka, and apricot soda, falls short of expectations. While the whisky notes remain prominent, the drink lacks the characteristic pungency of wasabi, resulting in a flavor profile that feels somewhat disjointed from its name.
Fortunately, the menu offers plenty of reliable alternatives. The Crimson Fizz elevates cherries from a mere garnish to a central ingredient, while the Soursop Colada reimagines the tropical Piña Colada using chocolate and yogurt whey. For those who prefer the familiar, Jigger & Pony continues to serve its legendary Peanut Alexander alongside a robust Yuzu Whisky Sour.
Visiting Jigger & Pony
The introduction of “Bloom” reinforces Jigger & Pony’s reputation for blending storytelling with high-caliber mixology. Located at 165 Tanjong Pagar Road in the Amara Hotel, the venue remains a requisite stop for both local enthusiasts and international cocktail tourists.
